The Soles of the Repsol Guide are the national equivalent of the most famous stars of gastronomy.
Now, after a new edition of the awards, the province already has 26 locals with Sol Repsol, and two of them with the highest distinction (3 Soles).
In 2025 Memoria Gustativa and Xanglot have their first Sol Repsol, while Susi Díaz’s restaurant (La Finca) in Elx gets for the first time the 3 Soles.

Casa Manolo recovers its authenticity and family spirit by offering traditional cuisine and classic dishes with the distinctive seal of the chiringuito’s founders, Alonso-Fominaya. Toshi specializes in Japanese and Mediterranean fusion cuisine, and offers multi-course menus that combine the best of both culinary traditions.

Memoria Gustativa☀️(new 2025)
A trip you will remember, or at least that is what the team of Javier Vega and Blanca Martínez are looking for. This restaurant combines a gastronomic proposal full of technique, creativity and flavor.
Among its star dishes, the “flan de papas” (a reinvented version of the potato omelette), eggplant in wine or banana with orange and gofio.

Xanglot☀️ (new 2025)
Identity cuisine with roots in the land. Xanglot, directed by chef Sandra Jorge Ferrer, bets on local ingredients and recipes with soul. Its menu stands out for dishes such as sweet rice with semi-cured tuna or lamb stew with garrofó, although there are always changes. A gastronomic space where every bite tells a story.

Apicius is a restaurant with a sophisticated and minimalist design, offering tasting menus through refined dishes of Mediterranean cuisine.

One of the best grilled meat restaurants in Spain is in Valencia, in the neighborhood of Beniferri. It is run by chef Pablo Chirivella, one of the winners at the last Soles Repsol 2023 gala.

A complete experience. After ten years as a restaurant and seven more years as a gastronomic show, now only 12 diners are the members of the new experience of Victor Rodrigo in Samsha, which has a sequence of passes with a duration of approximately 3 hours.

It is one of the outstanding discoveries of this year and has been awarded its first Sol Repsol. The Flama establishment, specializing in the preparation of grilled dishes, has obtained its first recognition from the Repsol Guide in the 2024 edition.
Located a short distance from the Mercado de Colón and on one of the city’s main avenues, this restaurant, under the culinary direction of Eduardo Espejo, has elevated the ancient technique of cooking by fire to an art form in the very heart of the city.
