A review of the taverns and tascas of all life, but applying haute cuisine techniques. This is how we could define the proposal of Memoria Gustativa, the restaurant in Valencia that has just entered the Michelin Guide as one of the recommendations of the month of August in this 2025.
This restaurant in the center of Valencia focuses on 3 main pillars: market produce (the fish on the menu is decided day by day), few dishes (between starters, desserts and main courses there are only 14) and a very careful technique in the preparation of each proposal (its chefs Javier Vega and Blanca Martinez worked at DStage Madrid).
With this base, Memoria Gustativa enters the French guide together with Flama, a restaurant specialized in grilled meats. “A sincere tribute to the classic dishes of bars and taverns, but reinterpreting them from a gastronomic and current vision, totally free, technical and creative”, the guide defines it in its latest publication about the restaurant.

Memoria Gustativa’s menu does not have high prices, with dishes starting at just over 5 euros and main courses at around 25 euros.
The best option to try their market cuisine are the two tasting menus for 58 and 75 euros. The first consists of 6 savory courses and 2 desserts; in the second the courses are extended to 9 euros with dishes that are not usually on the menu.
In exchange, the diner gets “dishes as surprising and delicate as its potato, egg and onion (it has the appearance of a flan)”, explains the French yearbook.
Memoria Gustativa, which also has a Sol Repsol, is located at Conde de Altea 43, and is open from Tuesday to Saturday from 1:30 pm to 5 pm, and from 8:30 pm to midnight.
