Fire, embers and smoke are the protagonists of the proposal of Flama, the restaurant in Valencia that, along with Memoria Gustativa, has entered the Michelin Guide as one of its outstanding recommendations for the month of August 2025.
Located next to the Mercado de Colón, this restaurant with a contemporary atmosphere bases its offer on the mastery of one of the most primitive cooking techniques, taken to a level of mastery by its chef, Eduardo Espejo.

The high quality product is the king of a concise menu where fish, meats and selected vegetables sizzle on the grill.
The Michelin Guide itself describes the experience as a spectacle: “Looking into the kitchen, open to the dining room like the stage of a theater (in fact, when they serve the last order they close some curtains, like a curtain), allows you to see their large pieces of fish tucked into ‘besugueras’, as well as some delicious meats”.
Flama ‘s menu focuses on noble pieces sold by weight, such as Cantabrian turbot (95 €/kg) or premium beef chop (90 €/kg). Next to them, more unique proposals such as the veal heart sweetbread (18 €) or the exclusive A5 Japanese Wagyu entrecote (40 € per 100gr).

The mastery of fire extends to the garnishes, with dishes such as Bimi sautéed on the grill with codium romesco (7 €), and desserts, where the grilled peach with smoked sheep’s milk ice cream (7.5 €) stands out.
The popularity of the restaurant is high, so the guide itself warns: “It tends to fill up daily, so…. we recommend booking!”.
