The Michelin Guide has once again turned its attention to the Valencian Community. There are more and more discoveries of the French in the terreta, and the latest is Arre, a restaurant in Castelló created in 2022 and based in the oldest civil building in the city.
Pedro Salas, in the kitchen, and Beatriz Villalba, in the dining room, are behind this project focused on the combination of sea and mountain dishes, with special care for local produce.
Arre has been installed in an iconic space in the old town of Castellón, where around the year 1300 was installed the so-called Forn del Canyare. Its 14th century oven is now kept as a decorative element, while the large arches that once belonged to the old city wall predominate.
Each table is equipped with grills, so that the diner can experiment with grilling.
The 5 menus of Arre in Castellón
Arre claims an autochthonous recipe book, which is the basis of its 5 available menus. Their price ranges between 35 and 45 euros.
There is the menu Ronda nocturna (dishes to share), Senda (the most traditional option, being able to choose between its Arroz al horno or a Torrà finished at the table, which has a griddle with embers in the center), Vía Verde (vegetarian), Ramal (more gastronomic) and Vía Augusta (a culinary journey between the sea and the mountains).
The detailed menus are composed of the following starters and dishes:
- Ronda Menu: four appetizers, five dishes to share and two sweet desserts are the perfect combination to take the diner on a nightly round.
- Senda Menu: the entrance to the world of Arre with iconic dishes and options such as the grilled torrà made at the table. Four appetizers, a starter, a main course and dessert make up the path of the ruta dels sabors.
- Green Way Menu: vegetarian option, prepared with creativity and care, demonstrating the restaurant’s commitment to inclusive cuisine. Same composition as the Senda Menu.
- Ramal Menu: four appetizers and five dishes, according to season and market. The path along the branch can include crudites and unusual flavors.
- Via Augusta Menu: the most ambitious menu, incorporating four appetizers and seven dishes, designed for those seeking a complete sensory experience.
All menus have the option of pairing, carefully selected to accompany the narrative of each dish and defend the goodness of the territory.
At the end, the restaurant usually gives away a small book with legends of the city.
The history of Arre
It was during the pandemic, in 2020, when its owners, Bea and Pedro, began to shape the business with the aim of enhancing the gastronomic value of Castellón.
Chef Pedro Salas, who throughout his career has gone through different projects such as the Aqua restaurant, also in Castellón, focused on the kitchen, while his wife, Beatriz Villalba, is responsible for a dining room that is committed to excellence in every service.
The inclusion of Arre in the Michelin Guide comes months after being recommended also by the Repsol Guide, as well as in “Los 55” of the gastronomic critic Santos Ruiz.
Arre is located in carrer Antonio Maura, 31, in Castellón. It is open from Sunday to Tuesday for lunch (13-16 hours) and from Wednesday to Saturday for lunch and dinner (20-23 hours).
