Perhaps the purists of esmorzar never imagined seeing this, but the gastronomic ingenuity in Valencia has no limits. Just landed in the heart of the city a proposal that promises to divide opinions and conquer palates in equal parts: a local kebab Valencian style.
Its name is Xe!Bap and its declaration of intentions is clear from the moment you walk through the door under its neon sign: here you won’t find the typical industrial meat rolls that are the norm in most nightclubs.
The “blanquinegre” in kebab format
The great revolution of Xe!Bap resides in its skewer of carved meat. The people in charge of the restaurant explain in a @bythefood_ video on Instagram that what they have done has been, literally, “to create the Valencian kebab”.
To do this, they have replaced the usual meats with two products deeply rooted in the land: a roll of longaniza sausage and a roll of colt meat.
What exactly is in it? Let’s take a closer look.

The star of the house seems to be the longaniza one, baptized as the “Guacho”. This kebab seeks to replicate the experience of the classic Valencian sandwich: they combine it with black pudding, and add cabbage, tomato, red onion and their own kebab sauce.
The result, according to those who have tried it, is inevitably reminiscent of the typical Valencian lunch, that “blanquinegre” of a lifetime, but served in the rolled format we all know.
The second option on the menu is the colt meat kebab. A meat with a very different texture to what is usually expected in this type of fast food, and that from the local recommend always accompany with a touch of spicy to round out the flavor.
