The Front restaurant, located in the Marina area of Valencia, has won this Monday the prize for the best Valencian coca in the 2nd edition of the Ruta de les Coques de Ambar.
The winning coca, prepared by chefs Juan Torres and Pablo Pascual, consists of a base covered with sea ragout, dried octopus, katsuobushi and salicornia.
The organization has confirmed that, although the event has officially ended, Front’s winning coca will remain on the restaurant’s menu for a month. The rest of the exclusive creations will no longer be available.
It will be available for tasting throughout the month of November at the restaurant itself for a price of 10 euros, with a third of beer included.
In addition to Front, the final phase saw proposals from Beirut, Camiri, Glops i Llandes and IDEM, who presented creations marked by the fusion of ingredients and techniques such as a Lebanese-inspired ca coca with shawarma and smoked eggplant hummus; another with veal heart gizzard, roasted marrow and bacon or an ‘umami’ creation with shiitake cream, sautéed mushrooms with ginger and lime mayonnaise.
The second edition of this gastronomic event, which took place from November 3 to 17, has had the participation of 18 locals distributed by nine neighborhoods of Valencia, such as Ruzafa, Cánovas, Ciutat Vella and Extramurs.
The panel of experts was formed by the journalist and communicator Silvia Ruiz de la Prada; the journalists of Love Valencia, Roberto Pérez and Rafaela Colina; and the gastronomic divulgator Sergio Caballero.
This recipe replaces the coca from the restaurant Namúa in Poblats Marítims, winner of the contest last May, as the best Valencian coca of 2025 that can be tasted at the moment.
